You will enjoy our fine cuisine with regional dishes from Baden. Hearty snacks, venison from the local huntsman, freshly caught trout, vegetarian meals and fine set meals are some of the specialities of our establishment.

Roast venison "à la Baden-Baden
Homemade Swabian noodles, pear stuffed with cranberries, salad of the season, 1 glass of red wine of your choice.
The house speciality of the Country Inn zum Walkenstein is prepared by our chef, Ulrike Echle
Recipe for 4 people:
Bone 1 kg of leg of venison
remove, sinews
bone
remove, sinews
½ onion
 
½ celery
 
1/2 leek
 
parsley root
pan-fry with the meat and bone until brown and add
1/2 1 of dry red wine
reduce
cloves, bay leaf
 
juniper berries
and top up with
½ meat stock
 
½ demiglace
auffüllen
Add a sprig of rosemary
 
cover and allow to simmer
1 ½ hours
   
400 g of plain wheat flour
 
6 eggs
and
salt
to a dough
Bring 4 1 of water
to the boil, cut the dough into noodles and scrape from the board into the water
rinse in cold water
allow to drain and
warm up
in butter
